…………………..Summer is the only time I will make one of my favorite lunches…………..THE TOMATO SANDWICH……….You MUST HAVE good tomatoes and good bread. I get my tomatoes from the Farmer’s Markets around the different towns. They are the only ones that taste the way tomatoes should. The grocery store tomatoes are never the same……The bread is very important! The slices have to be large and without HOLES!…..So many loafs of bread look good, but when you open them, and take out the slices they have huge holes! I’m not paying for holes!…..I usually get Portuguese Bread. The slices are just right, and no holes….I toast the bread, and then SLATHER it with mayonnaise…..lots of mayonnaise!…Place my tomatoes on top…..and add salt and pepper to taste……Voila your sandwich is ready to eat…..I like to have mine with a glass of ice cold lemonade!
Hello Louis! Hope you are doing well! I was browsing your posts here to catch up a bit and stopped dead in my tracks when I saw this one. What a great summer sandwich and one I will be copying! Not sure where to find Portuguese bread, but I will try. Looks so inviting and our tomatoes are so flavorful right now and remind me of the beefsteak tomatoes of my childhood in New Jersey. You are so right about the bread. Yesterday 2 different breads at breakfast & dinner both had holes.
