“COCONUT CREAM POUND CAKE”

 

 

 

 

 

 

 

 

 

…………………I’ve been feeling very COCONUT-Y lately, and I had coconut left over that I didn’t use for my Coconut Cream layer cake in the freezer….so…..I thought I would try this COCONUT CREAM POUND CAKE…….The only thing is….the instructions clearly state NOT TO USE A BUNT PAN….of which Jac had many! The receipt calls for a….TUBE PAN……I had no idea what a tube pan was….so I went to Amazon, and sure enough there they were…..I learned the difference is the center “ring” is much larger in a tube pan, and the inside is very smooth….no designs….I assume the heat gets distributed more evenly?……Anyway I ordered two sizes….one is more shallow than the other by an inch. I wasn’t sure which would be better for this receipt…..They were relatively inexpensive so I decided to get both just to be sure……I used the deeper one and it came out GREAT!……Another cake to add to my growing repertoire!
