“MY GO TO DINNER”

 

 

 

 

 

 

 

 

 

………………..”My Go To Dinner”……..I eat a lot of chicken….so I’m always trying different ways to cook it……This is one of my favorites, because it’s quick….sort of….and easy to make…..The marinade is simple…..I use the juice of one lemon, which I add two scoops of Dijon mustard and a healthy splash of heavy cream to. Then I add lots of pepper and LOTS of Tarragon, and stir it well……Then I get my chicken cutlets, but you can use any chicken you like. Sometimes I use skinless, and boneless chicken thighs. I wash it, dry it and cut it up into pieces…..not too small, because it they will shrink when cooking….Then the pieces go into a into a Pyrex dish. Next I pour the marinade all over and make sure all of the pieces, top and bottom, are covered. Then I add MORE Tarragon. I usually prepare this in the morning, cover it with Saran, so it can sit in the refrigerator for the day until I’m ready to cook it at 400 for 40 to 45 minutes. Before I put the chicken into bake I prepare my string beans and Brussel sprouts that I bought at the Farmer’s Market. There is nothing like freshly picked vegetables from the farmer’s market….they just taste so much better!…..While the chicken is baking I put the beans and sprouts in my steamer…..and let it all cook……I just use freshly squeezed lemon on my vegetables……and on my chicken…..It’s all so very HEALTHY, and tasty too…..
